Chef Cuquita Arias de Calvo

Since her beginnings, Cuquita knew how to bring the Panamanian pride to the table, taking local ingredients to create delicious dishes. Her extraordinary career has positioned her as one of the most recognized Panamanian chefs nationally and internationally. Recently the magazine "Saveur" included her in the list of the 100 best chefs in the world, the only Latin Chef to have this honor.

Cuquita grew up in a numerous family, being the youngest of six children. Her mother was Cuban and her father Panamanian. Granddaughter of Tomas Arias who was a founder of the Republic and member of the committee, served as head of state after the separation of Panama from Colombia. Since childhood she liked the kitchen, though she admits that not all attempts were successful: "When I was 10, I made mashed potatoes and put blue dye. The mashed took a green color and when I present it at the table, my brothers refused to eat, but the experience did not discourage me. "Back in Panama she organized cooking classes for children, but also dabbled in other fields such as: decoration and fashion design.

After 26 years Cuquita and her associate opened "Candy" the first gourmet business in Panama. Soon after she also began her social work with Bishop Romulo Emiliani and they founded NutreHogar, a nonprofit organization that is responsible for feeding children with malnutrition. For me, cooking is the joy of sharing with others, like feed the poor children, giving them love and a chance to get ahead is a cause that moves me deeply

For 14 years, Cuquita is the Executive Chef Hotel Bristol member of The Leading Hotels of the World. There are many restaurants and events which are recognized by the "Style Cuquita". This phrase, which later became the name of his television program, arose when scientists Sonian Smith Institute went to eat at a small restaurant in Bocas del Toro. The owner of the restaurant, a local, delighted with the visit, before serving the food, decorated the table with flowers of papo saying "Al Cuquita Style". That story made her see that people recognized her way of serving food as a style.

She was chosen to conceptualize the food for the set of the James Bond film Quantum of Solace, filmed in Panama. International firms such as Hermes, Chanel, Louis Vuitton, Cartier, Carolina Herrera, and Juicy Couture constantly hire their services. She has been honored with invitations to give seminars in several countries, as close as far away as Colombia and Monaco and has accepted the enormous challenge and pride to represent Panama in various international food festivals, including the prestigious Food & Wine Festival, held in Aspen, United States, which has involved several consecutive years.
